Ingredients :

2 tablespoons olive oil
2 eggplants, roughly cubed
8 ounces mozzarella cheese, shredded
3 spring onions, chopped
Juice of 1 lime
2 tablespoons butter, melted
4 eggs, whisked

Directions : 

1.Heat oil and butter in a suitable cooking pan over medium-high heat.

2. Add eggplants and spring onion in the pan and stir.

3. Cook in your air fryer at 380 degrees F/ 195 degrees C for 5 minutes.

4. Then add lime juice and the eggs in the cooking pan.

5. Cook at 380 degrees F/ 195 degrees C for 10 minutes.

6. Serve on plates as a side dish.
