Ingredients :

1 tablespoon olive oil
1 shallot, sliced
2 garlic cloves, minced
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
1 ½ cups kale
1 28-ounce bag frozen tater tots
6 eggs
1 cup milk
Salt and black pepper, to your liking
1 cup Swiss cheese, shredded
4 tablespoons seasoned breadcrumbs

Directions : 

1.Sauté the shallot, garlic, and black peppers with oil in a skillet for 2 to 3 minutes.

2. Add the kale and cook until wilted.

3. Arrange the tater tots evenly over the bottom of a lightly greased casserole dish.

4. Spread the sautéed mixture over the top.

5. In a suitable mixing bowl, thoroughly combine the eggs, milk, salt, black pepper, and shredded cheese. Pour the mixture into the casserole dish.

6. Lastly, top with the seasoned breadcrumbs.

7. Air fry at 330 degrees F/ 165 degrees C for 30 minutes or until top is golden brown.

8. Serve!
